Can't-Beet-It Cake

1/2 c butter
1 1/2 c packed brown sugar
3 eggs
1/4 c. butter
4 oz. semi sweet chocolate
2 c pureed cooked beets
1 t vanilla
2 c all-purpose flour
2 t baking soda
1/4 t salt
powdered sugar

Preheat oven to 375 degrees. Cream 1/2 c butter and brown sugar. Add eggs and vanilla, mix well. Melt chocolate squares with 1/4 c butter over low heat, stir until smooth, cool slightly. Blend chocolate and beets into creamed mixture. Combine dry ingredients and add to creamed mixture, mixing well. Pour into greased and floured 10 inch fluted tube pan. Bake for 45-55 minutes or until a tester inserted in the center of the cake comes out clean. Cool completely on wire racks before removing bread from pan. Dust with powdered sugar.
