Mayo-Have-Some-More-of-That Cake

1 1/3 c all-purpose flour
1 c sugar
4 T dry cocoa
1 t baking powder
1 t baking soda
3/4 t ginger
1/4 t salt
1 c mayo
1 c cold water
1 t vanilla

Preheat oven to 350 degrees. Sift dry ingredients together and add mayo, water, and vanilla; blend until smooth. Beat 45 seconds with electric mixer at medium speed or 2 minutes by hand. Pour mixture into greased 9 x 13 or two round cake pans with greased/floured wax paper on bottoms. Bake for 25-30 minutes or until cake starts to pull away from sides and a tester inserted in the center of the cake comes out clean. cool cake in pans 5 minutes before turning onto cooling rack. Frost.
